INGREDIENTS :
4 boneless, skinless chicken breasts, chopped into bite size pieces
1/2 medium head of cabbage, cored and sliced into shreds
5 slices of thick-cut bacon
2 cups broth
1 tbsp oil
sea salt & pepper to taste
Optional: 1/4 cup of grated Parmesan cheese
INSTRUCTIONS :
-Cook your bacon in a large saute pan over medium high heat. Remove to cool, then crumble. Preheat the oven to 200 degrees F. Add the chicken to the pan with the bacon grease and cook until browned on all sides, about 12 minutes. Remove to an oven proof dish and place in the oven to keep warm. -Next add the cabbage, oil if needed and salt and pepper and saute for a couple of minutes. Add the broth, cover and cook for about 20 minutes, stirring occasionally. Lastly,add the chicken, bacon and cheese if using and combine well.
