Chicken Thighs with Green Beans and Red Potatoes.

INGREDIENTS :
1.5 kilograms of chicken thighs
300 grams of green beans
300 grams red potatoes cut into dices
4 cloves of minced garlic
5 tablespoons olive oil
juice of one lemon
salt
pepper

INSTRUCTIONS :
-Preheat oven to 200°C.
-Face a large baking dish with one tablespoon of olive oil.
-Mix together the lemon juice with remaining 4 tablespoons of olive oil, garlic, salt and pepper in a large bowl.
-Add the green beans and toss to coat.
-Remove the green beans with a slotted spoon and place them in the dish.
-Add the potatoes to the same lemon mixture and toss to coat.
-Arrange the potatoes using a slotted spoon along the inside edge of the dish on top of the green beans.
-Place the chicken thighs in the same bowl with the lemon mixture and coat thoroughly.
-Put the chicken in the dish.
-Cast the remaining lemon mixture over the chicken.
-Roast for about 45 minutes.
-Remove the chicken from the dish.
-Take the beans and potatoes back to the oven for 10 minutes until the potatoes are tender and golden.
-Place a chicken thighs and potatoes onto a platter with the green beans.
Serve warm and enjoy.
